Recipe for Tiramisu (by yours truly)
Ingredients:
- 2 large Eggs
- 2 tablespoons Sugar
- 250g Mascarpone cheese
- 1 teaspoon Vanilla extract
- Sponge (lady) fingers
- Coffee (espresso or moka pot is best)
- Optional: Alcohol, like a sweet wine or liqeur (e.g. Marsala wine, Amaretto or anything you like)
- Cocoa powder
Utensils:
- 2 large clean bowls
- 1 shallow bowl
- Tablespoon
- Teaspoon
- 1 (or 2) Balloon whisk(s)
- Silicone spatula
- An appropriately-sized dish
- Plastic wrap/aluminum foil
Steps:
1) Brew your coffee and put into the fridge to chill. If you don't have espresso or moka pot, you can always use brewed or instant coffee.
2) For the tiramisu cream mixture, crack the eggs and separate the yolks into one bowl and the whites into the other.
3) Add the sugar and vanilla extract into the egg yolks and stir with a balloon whisk until the sugar dissolves.
4) Add the mascarpone cheese into the egg yolk mixture and combine.
4) Using a clean whisk, whisk the egg whites in the other bowl till you form soft peaks.
5) Pour the egg white foam into the cream and fold the foam in gently to finish making the cream mixture.
6) Prepare a shallow bowl and pour your coffee into it. Optionally, you can now add your alcohol of choice to taste.
7) Start dipping the sponge fingers on both sides in the coffee and place them in the dish to form the first layer. Refrain from oversoaking your sponge fingers.
8) Pour half of the cream mixture over the soaked sponge fingers. Spread the mixture out evenly with a silicone spatula or any other utensil.
9) Repeat step 7) and place the soaked sponge fingers ontop of the first layer.
10) Repeat step 8) by pouring the remaining cream mixture over the second layer of sponge fingers. Spread the mixture out evenly.
11) Cover the dish with a plastic or aluminum foil wrap and leave in the fridge overnight.
12) Dust with cocoa powder prior to serving.
